Sweet Potato and Bacon Hash


  • 2 1/2 slices of good quality bacon

  • 1 large sweet potato, peeled and slice into 1/2 inch cubes

  • 1/2 onion, diced

  • 2 cups baby spinach (packed)

  • Smoked paprika

  • Cayenne pepper, optional

  • Sea salt and ground pepper to taste


  1. Heat a large skillet over medium heat and cook the bacon until crispy, stirring occasionally.

  2. Remove from the pan using a slotted spoon and let the bacon rest on a paper towel covered plate.

  3. Add the onion and sweet potatoes to the skillet and season with paprika, cayenne salt and pepper to taste. Cook until soft, about 6 minutes.

  4. Add in the spinach and cook until wilted about 5 minutes.

  5. Fold in the bacon and mix everything together.

  6. Remove from heat and serve.
