Sweet Potato and Bacon Hash
2 1/2 slices of good quality bacon
1 large sweet potato, peeled and slice into 1/2 inch cubes
1/2 onion, diced
2 cups baby spinach (packed)
Cayenne pepper, optional
Sea salt and ground pepper to taste
Heat a large skillet over medium heat and cook the bacon until crispy, stirring occasionally.
Remove from the pan using a slotted spoon and let the bacon rest on a paper towel covered plate.
Add the onion and sweet potatoes to the skillet and season with paprika, cayenne salt and pepper to taste. Cook until soft, about 6 minutes.
Add in the spinach and cook until wilted about 5 minutes.
Fold in the bacon and mix everything together.
Remove from heat and serve.
