Herbed Mediterranean Frittata
6 Cherry Tomatoes
1/4 Red Onion, finely sliced
1 Garlic Clove, minced
5-6 Black Olives, pitted
3 Large Eggs
Salt and Pepper
Handful of Parsley, minced
Handful of Basil, minced
Handful of Mint, minced
Heat olive oil in a skillet or omelet pan. Add the cherry tomatoes, onion, and garlic. Season with salt.
Once onions have soften, add in black olives.
Whisk eggs in a small bowl, season with salt and pepper and stir in chopped herbs.
Pour eggs into skilet and cook for 3 to 4 minutes on medium-high heat.
Place into broiler for a couple of minutes. Use a knife to check when down. If knife comes out clean, frittata is done cooking.
