Herbed Mediterranean Frittata


  • Olive Oil

  • 6 Cherry Tomatoes

  • 1/4 Red Onion, finely sliced

  • 1 Garlic Clove, minced

  • 5-6 Black Olives, pitted

  • 3 Large Eggs

  • Salt and Pepper

  • Handful of Parsley, minced

  • Handful of Basil, minced

  • Handful of Mint, minced


  1. Preheat broiler.

  2. Heat olive oil in a skillet or omelet pan. Add the cherry tomatoes, onion, and garlic. Season with salt.

  3. Once onions have soften, add in black olives.

  4. Whisk eggs in a small bowl, season with salt and pepper and stir in chopped herbs.

  5. Pour eggs into skilet and cook for 3 to 4 minutes on medium-high heat.

  6. Place into broiler for a couple of minutes. Use a knife to check when down. If knife comes out clean, frittata is done cooking.

  7. Enjoy!
