Apple and Cinnamon Oat Squares
2 tablespoons coconut oil
2 tablespoons honey
2 cups rolled oats
2 teaspoons cinnamon
1 tablespoon dried cranberries (optional)
1 tablespoon pumpkin seeds (optional)
Preheat oven to 350 degrees F and grease an 8 inch square baking pan with coconut oil.
Cut the apples into quarters, remove the seeds, then place in a food processor. Process to a coarse puree.
Melt the coconut oil and honey together in a pan over medium-high heat. Once they have combined, add the apple puree and stir well.
Add the oats, cinnamon, cranberries, and pumpkin seeds and stir thoroughly to form a sticky mixture.
Transfer the mixture to the prepared pan, pressing down well, and bake for about 20 minutes, or until the top is golden brown.
Let cool completely before cutting into squares.
